Tender Cashew Nuts Gravy ( Olya Kajuchi Usal )


( No Need of adding Chili Powder or Garam Masala )
INGREDIENTS

1) Fresh tender cashew nuts = 1 cup
2) Drumstick = 1 no(cut in to 3 inch pieces )
3) Potatoes = 2 no.(half inch size cube)
4) Finely chopped onion = ½ cup
5) Turmeric powder = 1/4 tspn
6) Finely chopped fresh coriander = 3 tbsp
7) Malwani masala = 2 tbsp
8) Salt to taste
9) Oil=4 tbsp
FOR COCONUT-ONION PASTE
1) One medium onion = vertically sliced.
2) Fresh coconut(scraped )= 1 cup
3) Garlic cloves= 6 no
METHOD
1) FOR THE PASTE: In a pan, dry roast chopped onion and garlic, when it turns light pink, add grated coconut. Keep stirring continuously till the mixture turns light golden brown in color fixture, blend it to a smooth paste.
2) Soak fresh tender cashew nuts in a hot water so that their skin come off.
3) Heat oil in a pan. Add chopped onions and stir till it translucent. Add turmeric powder, peeled potatoes, drumstick pieces and Malwani masala and cook for 10 min.
4) Add coconut-onion paste and stir for 2-3 min and sauté it. Then add cashewnuts.mix well.
5) Allow to cook for 10 min adding 1 cup of water on low flame.
6) Add salt and allow to cook till the gravy thickens.
7) Garnish with chopped coriander leaves.
