INGREDIENTS
1) Ambemohar or Kolam rice = 1 cup
2) Cauliflower = 10 -12 florets
3) Carrot = peeled ,1”long piece.
4) Eggplant (small brinjals )= 2-3(cut into small cubes)
5) Ivy gourd (Tendli)=6 no(cut lengthwise)
6) Chopped fresh coriander leaves = ¼ cup
7) Heramba Goda masala = 2 tsp
8) Red chili powder = 2 tsp
9) Turmeric powder = 1/2tsp
10) Mustard seeds= ¼ tsp
11) Cumin seed =1/4 tsp
12) Asafetida (hing )=1/4 tsp
13) Fresh coconut scrapped =2 tbsp
14) Roasted cashew nuts= 2 tbsp
15) Oil = 2 tbsp
16) Ghee=2 tsp

METHOD
1) Wash the rice and soak it in 2 cups of water for thirty minutes.
2) Heat oil in a thick bottomed vessel. Add mustard seeds, cumin seeds, asafetida, and stir fry for 2 min.
3) Add roasted cashew nuts, turmeric powder and all chopped vegetables. Sauté the vegetables for 5 min
4) Add red chili powder, Goda masala to the Sauté water and salt.
5) Cover the vessel and let it cook completely on a medium heat. Once the rice is cooked and all the water is absorbed, remove it from heat.
6) While serving, drizzle 2 tsp ghee and garnished with chopped coriander leaves and fresh grated coconut.
